In our kitchen, Nordic flavors meet the philosophy of Mediterranean cuisine, creating extraordinary taste experiences. Head Chef Silver Illak crafts dishes that tell the story of local nature, Mediterranean herbs, and long-standing traditions.
The Nordic mindset of using local ingredients lies at the heart of our dishes, honoring local heritage and nature. Our organic lamb comes from the Ala-Mähkli Farm in Karula National Park, where animal welfare and meat quality are given special attention. We are one of the few restaurants in Estonia that embrace the "nose-to-tail" principle, preparing all cuts on-site and adhering to a zero-waste philosophy. Similarly, we carefully select fresh trout from the Karilatsi Fish Farm, just a 30-minute journey to our kitchen.
